So wifey’s away and dad is pottering in the kitchen. It’s a papa & PYT lunch date at home. If the daughter wasn’t there, I’d do things differently, but all the same, here I am, trying my hand with whatever is close at hand and I can dig out.
Kale Salad – with barley, pomegranate, sliced orange pieces, dried berries and almonds in a honey-balsamic-chili dressing (I also added some readymade spice consisting of crushed citrus, vanilla, chocolate and cinnamon, just for kicks). The sweetness of the fruit and honey kind of balances the bitterness of the kale, while the chili flakes give it a kick. And after an experiment at school proved the health benefits of kale, there’s little convincing, cajoling to be done.
Avocado – with EVOO, ground pepper, lemon juice, garlic and powdered cumin, blended in a mixie, with chia seeds and toasted pine nuts sprinkled on top. Simple and tasty without being overpowering, it can go with anything, or even as a spread by itself.
Chicken – pan fried boneless breast fillets with a mix of readymade poultry seasoning + Creole spice, finely sliced garlic and Tabasco.
Overall, not too much trouble and not too much time. I’d have an accompanying beer to celebrate, but the girl would complain to her mom and I’d have both ladies of the house rib and nag me me about my ‘6 pack abs’ so discretion is the better part of valour. I’ll snooze instead!

Nice and colourful. My younger daughter might be interested in this kind of meal sans the chicken since she is now totally vegetarian. As I recall, you don’t like washing up the dishes so this recipe sounds like it works quite nicely. Enjoy your Sunday Kunal!😀

The better team huh? I’ll be gracious in accepting the outcome though we had a good day of sport yesterday. Yes, Iike most South Africans, we love our meat too but I find Indian cooking has lots of lovely vegetarian recipes. Enjoy!
